Tomatoes on the Grill!

When we cookout we try to grill our protein as well as a side dish, so we do not have lots of dirty dishes to wash.  Then add a bag of salad and dressing and you have a quick meal. ~ Angela



Grilled Tomatoes with Basil Vinaigrette


3 yellow tomatoes
3 red tomatoes (can use all red)
3 tablespoons olive oil, divided
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1Tbsp balsamic vinegar
1Tbsp white wine vinegar
1/2 tsp honey
2 tablespoons chopped fresh basil (or 2 tsp dried basil)

Cut tomatoes in half; thread onto a pair of skewers (rather than the one shown, it will keep them from falling off as they get soft on the grill,) alternating colors. Brush with 1 tablespoon oil; sprinkle with salt and pepper.

Grill, covered with grill lid, over medium heat (300° to 350°) 10 minutes, turning skewers often.

Combine remaining 2 tablespoons oil, balsamic vinegar, white wine vinegar, honey and basil; drizzle over kabobs.  Serve these with grilled fish or chicken, or make them part of a colorful veggie plate. (6 servings)

Source:  Southern Living and I made a few changes.  Original recipe called white balsamic vinegar which many of us do not have in the pantry.

Memorial Day Weekend is Great Corn on the Cob Time!



Think beyond butter when roasting your corn on the cob in foil in the oven or on the grill. I always wrap my corn in foil, because it keeps it moist and allows you to add a variety of seasonings to add additional flavors. Below is one of my favorite ways to season the corn before wrapping it in foil. Everyone loves the flavor of garlic bread and combining it with corn is a great pairing. ~ Angela


Oven Roasted Garlic Corn on the Cob

Serves: 4

4 cobs of fresh corn
2 tbsp olive oil or butter
1 tbsp garlic bread spice blend
salt and pepper
Parmesan cheese

Preheat oven to 400 °F. Remove husks and silk from corn, rub in olive oil, and sprinkle with garlic bread seasoning, salt, and pepper. Wrap ears in foil and bake for 20 minutes, or until soft and steaming. Open and sprinkle with Parmesan cheese. Enjoy!

New Recipe! Crock Pot Hawaiian Pulled Pork



Crock Pot Hawaiian Pork


2-¾ lb. pork loin
1 onion, sliced
½ c. packed brown sugar
½ c. fat-free chicken broth
¼ c. low-sodium soy sauce
6 oz. pineapple juice
½ tsp. red pepper flakes
 ½ T. minced ginger
2 tsp. minced garlic

In a medium bowl, stir together brown sugar, chicken broth, soy sauce, pineapple juice and red pepper flakes. Reserve half of this mixture for sauce later. Place onion in the bottom of a crock pot coated with cooking spray. Place pork over onion and pour half of broth mixture over pork. Cover and cook on low for 7-8 hours or until easily shreddable. Shred pork. In a small saucepan coated with cooking spray, sauté ginger and garlic for 30 seconds. Add reserved broth mixture and cook until reduced (about 10 minutes). Stir into shredded pork. Serve on Hawaiian rolls. One roll is 3 points +, 2 rolls are 5 points+ Add points for rolls. Serves 25-30 (2 points +)

"As Good As Olive Garden" Stuffed Mushrooms

I love this recipe and have made it for years.  I believe the key to the great flavors comes from the  can of clams.  Even if you don't like clams (I love them), give it a try with them.  You will be surprised.

I throw my ingredients together and honestly add extra Parmesan and mozzarella cheese to the stuffing.  I always have more than 8 to 12 mushrooms and this also depends on the size of the mushrooms on hand.  I also use Brummel & Brummel butter for the melted butter. ~ Angela

8 -12 fresh mushrooms

1 (6 ounce) cans clams ( drained and finely minced)
1/4 cup of clam juice (from the can of clams)
1 green onion, finely minced
1 egg ( beaten)
1/2 teaspoon minced garlic
1/8 teaspoon garlic salt
1/2 cup Italian style breadcrumbs
1 teaspoon oregano leaves
1 tablespoon melted butter, cooled
3 tablespoons finely grated parmesan cheese
2 tablespoons finely grated mozzarella cheese ( for stuffing)
1/4 cup finely grated mozzarella cheese ( for garnish)
1/4 cup melted butter
fresh parsley ( for garnish)

Preheat the oven to 350°F. Lightly oil a small baking dish. Gently wash and stem mushrooms; pat dry (Save stems for another recipe). Combine clams, onions, garlic salt, minced garlic, butter and oregano in a bowl and mix well. Add Italian bread crumbs, egg, clam juice, mixing well. Add Parmesan and Mozzarella cheeses to the clam stuffing and mix well. Place the clam stuffing mixture inside mushroom cavity and slightly mound . Place the stuffed mushrooms in slightly oiled baking dish and pour 1/4 cup melted butter over the top of the mushrooms. Cover and place in oven for about 35- 40 minutes. Remove cover; sprinkle the 1/4 cup freshly grated mozzarella cheese on top and pop back in oven just so the cheese melts slightly. Garnish with freshly diced parsley. Serve hot.
