Maple Vinaigrette Recipe ~ Very Unique!

•1 teaspoon dry mustard
•1/2 teaspoon dried basil
•1/4 cup balsamic vinegar
•1/2 cup maple syrup
•1 Tablespoon lemon juice
•1 clove garlic, minced
•1 cup olive oil
•1 teaspoon salt
•1/4 teaspoon ground pepper

Preparation:
Combine mustard and basil in a small bowl. With a whisk, add vinegar, maple syrup, lemon juice and garlic. Add olive oil and continue whisking until ingredients are well combined. Season with salt and pepper. Refrigerated, the dressing will keep for several weeks

Note: I had figured this recipe in the latest Ivy Ridge email and it was very well received. I decided to post it here on our blog, so everyone could refer it again if they need to do so. I know I have said before that I hate bottled supermarket salad dressings and this recipe is one of the reasons why. It is AMAZING and has a long shelf life if refrigerated. ~ Angela

Pinterest Find! Great Repurpose for Tin Cans!

I am glad I saved this photo.  It was from Better Homes and Gardens website and now it cannot be found!  I don't think this needs a lot of explanation.  I would put a screw directly in the center of each can to attach it to the wall.  An old rusty screw would add character as well. ~ Angela

Baked Italian Parm Portobello ~ Yum!



Baked Italian Parm Portobello
I love this recipe because of the simple breading on the mushroom itself makes this a unique version of stuffed portobellos.  Also simply add a small amount of turkey sausage, turkey pepperoni or lean ground beef for a protein main course.  ~ Angela


Ingredients:
1/2 cup Italian-style bread crumbs
1 cup (3-oz.) freshly grated Parmesan cheese, divided use
1 teaspoon sweet paprika
1/4 cup fresh minced parsley, divided use
2 teaspoons kosher salt, divided use
3/4 cup egg substitute
1/2 teaspoon fresh ground black pepper
1 teaspoon marjoram leaves
1 teaspoon garlic powder
1 teaspoon oregano leaves
4 large (5 to 6-inches wide) stemmed portobello mushrooms, brushed clean
1-1/2 cups (6-oz.) shredded part-skim mozzarella cheese
1 cup commercially prepared "light" tomato sauce
Cooking spray

Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and place a wire cooling rack inside the baking sheet. Mist rack with cooking spray. Set aside.

Combine bread crumbs, 1/2 cup Parmesan cheese, 3 tablespoons parsley, paprika and 1 teaspoon salt in a shallow pan. Mix well. Set aside.

In a separate bowl, combine egg substitute, remaining 1 teaspoon salt. pepper, marjoram, garlic powder and oregano. Mix well.

Dip both sides of mushrooms into egg mixture. Dredge in crumb mixture until both sides are completely coated. Transfer, stem side down, to prepared wire rack. Spray tops with cooking spray and bake for 15 to 20 minutes, or until mushrooms are tender. Remove pan form oven.

Increase oven temperature to 450 degrees. Turn mushrooms stem side up. Cover each mushroom with 2 tablespoons of remaining Parmesan cheese, 1/4 cup tomato sauce and top with 1/4 cup mozzarella cheese. Spray tops lightly. Return to oven and bake until cheese melts and mushrooms are warmed through, about 10 minutes. Transfer mushrooms to a serving platter. Sprinkle with reserved 1 tablespoon parsley. Yield: 4 servings.

Zucchini Pie ~ Great Low Calorie Recipe!

Easy Zucchini Pie is one of my favorite recipes.  Honestly, I make it almost once a week.  I love it because it is only 120 calories per serving.  This is a great breakfast dish and I also keep leftovers in the frig for a low-calorie, fulling snack.  You could easily add a protein to make this a main dish for breakfast or dinner, such ham, sausage or bacon. ~ Angela

Easy Zucchini Pie

1 cup chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/3 cup grated Parmesan cheese
2/3 cup Bisquick Heart Smart® mix
3/4 cup fat-free (skim) milk
2 eggs or 1/2 cup fat-free cholesterol-free egg product
1/2 teaspoon salt
1/4 teaspoon pepper

1. Heat oven to 400°F. Lightly grease bottom and side of pie plate, 9x1 1/4 inches.

2. Sprinkle zucchini, tomato, onion and cheese evenly in pie plate.

3. Stir together remaining ingredients with fork until blended. Pour evenly into pie plate.

4. Bake about 35 minutes or until knife inserted in center comes out clean. Cool at least 10 minutes.

Makes 6 servings

Nutrition Information: 1 Serving, Calories 120, (Calories from Fat 40), Total Fat 4 1/2g  (Saturated Fat 1 1/2g, Trans Fat 0g), Cholesterol 75mg; Sodium 450mg; Total Carbohydrate 14g (Dietary Fiber 0g, Sugars 5g), Protein 7g
