Many days I am to busy to plan ahead for a healthy dinner, so the crockpot is my friend! Here is one of my favorite crockpot recipes that gives you the ability to add additional items to suit your taste.
Chicken Crockpot Tacos with Rice
1 cup frozen corn

1 onion diced
1 can seasoned black beans
2 cans diced tomatoes with chilies
8 chicken tender loins or 4 breasts
1 can of fat free chicken broth
1 envelope of taco seasoning
Fat free or low fat cheddar cheese
Fat free sour cream
Brown rice or taco salad fixins
Layer chicken, onion, corn and black beans in pot. Mix broth, taco seasoning and tomatoes and pour over chicken mixture. Cook on high for 4 hours. Serve over brown rice or taco salad fixins with ff sour cream and a sprinkle of cheese on top.
